The Madagascar Story
Madagascar was basically a pirate vacation spot, although the waters surrounding it weren't so friendly. The island itself provided many comfort foods such as beef, chicken, eggs, a huge variety of fresh fruits and of course, the Madagascar Chili. It was common for the buccaneers to leave messages at meeting spots that read "Gone to Madagascar for lymes".
The island was such a popular spot that in the late 17th century, a colony founded by pirates emerged on the island. They called their colony Libertalia, from the Latin word liberi which means "free". It was established as a society in which people of all colors, creed and beliefs were to be free of any scrutiny.

Madagascar Recipes

As a seasoning......
Use your Madagascar Blend spice straight from the jar to season poultry, fish, pork, beef, tofu or vegetables with an insanely tasty chili flavor and heat plus a touch of citrus that perfectly rounds it out.

As a marinade...
To use your Madagascar Blend as a marinade, simply mix 4-6 TBLSPs of Madagascar Blend to 1/2 cup olive oil and mix well. Marinade your poultry, fish or pork for at least 8 hours. For maximum flavor, marinade for 24 hours. |
Captain B's Spiked Cucumber Salad
Peel and slice 2 cucumbers and place in a large bowl. Season generously with 1-2 TBLSPs of Captain B's Madagascar Blend. Allow the cucumbers to sit and sweat for 1 hour then drain any liquid. While cucumbers are sweating, slice 1/2 a red onion thinly and cut the slices in half. Chop 2 Roma tomatoes into chunks and set both aside. Pour 1 1/2 cups of white vinegar into a small sauce pan and add 1/2 cup of sugar. Heat on stove top on medium heat, stirring until all the sugar has dissolved and remove from heat and allow to cool. Pour cooled vinegar/sugar mixture over the cucumbers and add chopped tomatoes, red onion and 1 tsp of dill weed. Mix well and refrigerate for at least one hour before serving.

Captain B's Madagascar Tequila ShrimpIn a large bowl, put 1lb of uncooked, thawed, deveined, peeled shrimp and coat with 1-2 TBLSPs of Captain B's MADAGASCAR BLEND seasoning and allow it to sit in the refrigerator for at least 1 hour.
Meanwhile, mince 2-3 cloves of garlic, chop cilantro (if desired), and get the zest and juice of 1 lime. Pour 2oz of Tequila, drink it to be sure it is still good, and then pour another 2oz to use for the dish. (Blanco or reposado highly recommended) Heat 2 TBLSPs olive oil in a large skillet on medium-high heat. Add the minced garlic and cook for about 30 seconds. Add your pre-seasoned shrimp and cook for about 90 seconds per side. DO NOT OVERCOOK! Shrimp should take no longer than 3-4 minutes to fully cook (depending on the size you use) and are done as soon as they turn pink. Remove shrimp from your pan and set aside. Pour your lime juice, lime zest and tequila into the hot pan. Allow to cook for about 30 seconds and then, using the flat edge of a wooden spatula, scrape off any of the brown, crunchy bits that have stuck to the bottom and side of the pan and continue to cook the liquids for a total of 3-4 minutes. Add your shrimp back to the pan just long enough to reheat it and remove from heat. Serve immediately with warm tortillas, over rice or pasta and top with chopped cilantro, shredded jack cheese and/or lime slices. |
